Home baked seed crackers with cream cheese and carrot salad.
Very simple dish really, but very yummy. One of my favorite low-card snacks.
Seed cracker recipe:
180g mixed seeds (sun flower seeds, flax seeds, pumpkin seeds, sesame seeds etc)
1 tbs psyllium husks
1/2 tsp salt
1. Preheat the oven to 160degree.
2. In a mixing bowl, combine everything and leave the mixture for 10 minutes in order to let it set thick and pliable.
3. Spread the mixture thinly on a baking tray with baking paper.
4. Bake for 70 minute or more until crispy.
Shred carrot thinly then splash some apple cider vinegar and let it set for 10 minutes. Finish with freshly grounded black pepper. That’s it.
The vinegar brings out the sweetness of carrot.
